Necessary Things:
- Fresh fish (4) pieces Mahi/Mahi
- Pineapple juice / citrus juice
- Soy Sauce
- ZipLoc Bag to marinade the fish
- Mango Salsa
- One large Mango
- One bunch / Green Onion
- Half bunch/ Cilantro
- Red Bell Pepper (optional)
- 2 tomatoes, medium, remove seeds
- 2 limes
- Accent the meal with Brown Rice
Step 1:
Mangos are in Season on the west coast right now. I found these Mangos at the Super-Walmart on sale, 2 for $1. This fruit can accent just about any fish recipe, and I especially like the taste and texture of fresh Mango... Kind of like a firm peach. I like to cut it up and mix it with a variety of other vegetables and fruits and sneak into a healthy meal for my kids.. that's the key to feeding a healthy meal to our kids. Sometimes, they don't need to know what they are eating... as long as it tastes good! Watch the video and you will see how easy it is to make a light, healthy and easy grilled fish recipe with my Mango Salsa.
Step 2:
I used a homemade marinade for this video, but I know there are a lot of great, "already made" marinades that will accomplish the same taste at your local market. The key to your marinade is time. If you remember to prep your fish before you leave home for the day, your marinade will always make the fish taste great as long as it has a couple hours to absorb. Tips and Tricks:
- Always get rid of the "goo" and seeds of the tomato when you are making the mango Salsa.. kids find the "goo" gross!
Warnings:
- There is a lot of fiber in a Mango.. Go easy on it and don't over eat Mango, or you will be going a "go-go lot"
