Cookies and Acupuncture?
The back-story to this cookie recipe comes from an
appointment with my acupuncturist. As a man with two careers and three
children, I have a lot going on in my life and my health is important to me. I use
acupuncture to maintain optimum health and this cookie recipe was learned while
I was taking my monthly appointment. As you imagine me lying on a table, face
down, with a bunch of needles placed throughout my back; the conversation
between my acupuncturist and I turned to cookie recipes. Yes, cookie recipes. It became evident
that my acupuncturist was as fond of cookies and he was excited to share a
recent, flourless cookie recipe with me during my appointment.
Now, if you have never had an acupuncture treatment, let me
explain a key component to the "needle therapy". There is a point in the
treatment when all needles are placed; your body becomes relaxed, so relaxed you
begin to fall asleep. Deep sleep. So as my story goes, this recipe was exchanged during my
appointment and I promise you that I stayed awake to capture the complete
recipe to share with you. Don’t be fooled by the simplicity; if you are looking
for a quick and easy peanut butter cookie recipe, look no further. Enjoy!
Ingredients/ Shopping List:
1- Cup Creamy Peanut Butter
1- Cup Granulated Sugar
Optional Item: Reese’s Peanut Butter Cups
Equipment: ungreased cookie sheet, mixing bowl, pre-heat
oven to 350
Cooking Steps: Pre-heat oven 350 Degrees F*
Take large mixing bowl and mix all ingredients together,
well. Take ungreased cookie sheet and roll out, 6-8 golf-ball sized cookie
dough and place on the sheet. If you are using the optional, peanut butter
cups, then press the cookie flat and put the candy in the center of the cookie
and cover the peanut butter cup with some extra cookie dough.
In this recipe, I am making LARGE cookies; therefore my
baking time is going to be a little longer than the normal recipe, (15- 18
minutes). For standard-sized cookies, the bake time will be 10-12 minutes or
when the sides of the cookies are brown. You will note that this recipe has no
flour, so these cookies are going to be dense and take less time to bake.
When done, allow cookies to cool and serve warm.
