kids to more fruits and vegetables as part of a plant based nutrition program.
Learn how to make the best fruit salad.

The combination of watermelon, cantaloupe,
and cucumber offers a variety of flavor your kids will love. Give it a try!

Cucumber in a Fruit
Salad?

Why cucumber? Well, for starters, a cucumber is technically
a fruit and it offers a crisp crunch to my fruit salad recipe. Secondly, a
cucumber can start a conversation with your kids who are wondering what it is
doing in your fruit salad. Sometimes, adding a fruit or vegetable that is not
common in a fruit salad adds a little adventure and intrigue. Give this recipe
a try and share your results with our viewers.

Fiesta Friday

In this video, my daughter was heading to her summer surf
camp and was asked to bring a snack for her potluck. Cookies were out of the question and I just didn’t want to
offer the same old, "packaged stuff" that you can find at any convenience
store. My daughter made the suggestion, "how about some fruit?" and then I
decided to get creative with her suggestion. "Why not add some different fruits
and make a fruit salad?", I said.

And sure enough, with her input and my creativity; we came
up with our favorite summertime fruit salad called the Fiesta Friday Salad. Give it a try!

Ingredients and
Shopping List:

1- Medium Watermelon, Cut and chunked

1- Medium Cantaloupe, Cut and chunked

2- Medium Cucumbers, Peeled and cut

1- Bunch of Spearmint Leaves

1- Tablespoon of Agave Nectar or Honey for sweetener

Step 1: Start with Melons

In my video, I started with the watermelon and took two
different steps. First cut the melon into large slices. Then use a butter knife
to cut between the rind and the meat of the melon. This process maximizes the amount of fruit and leaves very
little waste. Repeat this process and then cut medium sized "chunks" of melon and place into a large bowl.
Repeat the same process for the Cantaloupe. Make sure to use the butter knife
step to ensure the best results as well. Add cantaloupe into the bowl and keep
chilled in the fridge.

Step 2: The Cucumber

Peel two medium sized cucumbers and cut into "Wagon Wheel"
slices. Not too thick and not too thin. Add the cucumber slices into the same
bowl with the melons. Take a few stems of the Spearmint and peel off the leaves
and spread into the melon bowl.

Finish the bowl of fruit by adding a squeeze or two of Agave
Nectar or honey and toss the salad in the bowl and mix the ingredients
together. Keep the bowl of fruit in a refrigerator and covered until time of
serving. A great pairing with this salad is an ice cold cup of Silk Almond Milk or Coconut Milk.
